A Flavorful Dive into Yaki Udon Cuisine

Yaki Udon made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 300 g udon noodles
  • 150 g shiitake mushrooms
  • 100 g bok choy
  • 1 medium carrot julienned
  • 2 green onions chopped
  • 2 cloves garlic minced
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sesame oil
  • Protein of choice e.g., chicken, tofu or shrimp

Method
 

  1. Prepare the udon noodles as per package instructions and set aside.
  2. Heat sesame oil in a large pan or wok over medium-high heat.
  3. Add minced garlic and stir-fry until fragrant, about 30 seconds.
  4. Introduce the carrots and mushrooms, stir-frying for 2-3 minutes until softened.
  5. Add bok choy and green onions, mixing well and cooking for another 2 minutes.
  6. Add the cooked udon noodles, followed by soy sauce and mirin, stirring to combine.
  7. If using, add your choice of protein and stir-fry until cooked through.
  8. Serve immediately while hot, garnished with extra green onions if desired.
