Ingredients
  

  • 2 large eggs
  • 1 ripe avocado
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 2 tablespoons fresh cilantro chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Method
 

  1. Boil the eggs in water for 9-12 minutes.
  2. Prepare an ice bath while the eggs boil.
  3. Transfer the boiled eggs to the ice bath for 5-10 minutes.
  4. Peel the cooled eggs and slice them in half.
  5. In a bowl, mash the avocado and mix with lime juice, salt, and pepper.
  6. Add the cherry tomatoes, red onion, and cilantro to the mash.
  7. Plate the avocado mixture and top with the halved eggs.
