Ingredients
  

  • 8 ounces of penne pasta
  • 1 tablespoon olive oil
  • 1 pound Italian sausage sweet or spicy
  • 3 cloves garlic minced
  • 1 can 14.5 ounces diced tomatoes, undrained
  • 4 cups fresh spinach
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Method
 

  1. Cook the penne pasta according to package instructions.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the sausage and cook until browned.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Add the canned tomatoes and oregano to the skillet, then simmer.
  6. Add the fresh spinach to the sauce and stir until wilted.
  7. Combine the drained pasta with the sauce.
  8. Serve hot, topped with grated Parmesan cheese.
