Ingredients
  

  • 1 block about 200g feta cheese
  • 2 cups cherry tomatoes
  • 10 oz pasta e.g., penne or fusilli
  • 2-3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, garlic, and dried oregano.
  3. Drizzle olive oil over the mixture and toss gently to coat.
  4. Place the feta cheese block in the center of the dish and season with salt and pepper.
  5. Bake for about 30 minutes or until the tomatoes burst and the feta is golden brown.
  6. While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente.
  7. Once baked, remove the dish from the oven and use a fork to stir the feta and tomatoes together until creamy.
  8. Add the cooked pasta to the baking dish and mix thoroughly to combine.
  9. Taste and adjust seasoning as needed before serving.
