Bright and zesty grilled shrimp salad recipe

Grilled Shrimp Salad made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1/4 cup fresh cilantro chopped
  • 3 tablespoons lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon cumin

Method
 

  1. Marinate the shrimp in a mixture of olive oil, garlic, smoked paprika, lemon juice, salt, and pepper for at least 20 minutes.
  2. Preheat your grill to medium-high heat.
  3. Thread the marinated shrimp onto skewers for easy grilling.
  4. Grill the shrimp for about 2-3 minutes per side, or until they turn pink and opaque.
  5. In a large bowl, combine mixed greens, cherry tomatoes, sliced avocado, and chopped cilantro.
  6. In a small bowl, whisk together lime juice, honey, cumin, salt, and pepper for the dressing.
  7. Once the shrimp are cooked, remove them from the skewers and allow them to cool slightly before adding to the salad.
  8. Drizzle the dressing over the salad, toss gently, and serve topped with the grilled shrimp.
