Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 medium onion sliced
  • 2 bell peppers red and green, sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Prepare the chicken by seasoning it with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook for 6-7 minutes per side until browned.
  4. Remove chicken from the skillet and set aside to rest.
  5. In the same skillet, add sliced onions and cook until translucent, about 3 minutes.
  6. Add sliced bell peppers and cook for an additional 5 minutes until slightly softened.
  7. Stir in minced garlic and cook for about 1 minute, until fragrant.
  8. Return the chicken to the skillet, then pour in the chicken broth.
  9. Reduce heat and let simmer for about 5-10 minutes, until the chicken is cooked through and the sauce has slightly thickened.
  10. Garnish with fresh parsley before serving.
