Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon

  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 tsp vanilla extract
  • 8 oz cream cheese softened
  • 4 cups powdered sugar
  • 1 tsp lemon juice

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Prepare baking sheets with parchment paper.
  3. In a large mixing bowl, whisk together the dry ingredients: flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
  4. In a separate bowl, mix the granulated sugar, brown sugar, and vegetable oil until well combined.
  5. Add the eggs, one at a time, mixing well after each addition, then stir in the grated carrots and vanilla extract.
  6. Gradually mix the dry ingredients into the wet ingredients until just combined.
  7. Using a cookie scoop, portion out the batter onto the prepared baking sheets about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are golden.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
  10. While the cookies cool, prepare the filling by beating together the cream cheese, powdered sugar, and lemon juice until smooth and creamy.
  11. Spread a generous amount of filling on the flat side of half the whoopie pies, then top with the remaining whoopie pie halves.
  12. Press down gently to sandwich them together, then refrigerate for at least 30 minutes before serving.
