Lucky Charm Cake made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 ½ cups sugar
  • 1 cup unsalted butter softened
  • 4 large eggs
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 cups Lucky Charms cereal
  • 1 cup cream cheese softened
  • 2 cups powdered sugar
  • 2 tablespoons milk for frosting
  • Extra Lucky Charms for decoration

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract and whole milk until well combined.
  6. In a separate bowl, whisk together flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  8. Fold in the Lucky Charms cereal.
  9. Evenly distribute the batter into prepared pans and smooth the tops.
  10. Bake for 25-30 minutes, or until a toothpick comes out clean.
  11. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack.
  12. In a mixing bowl, combine cream cheese and powdered sugar; add milk to adjust consistency.
  13. Place one layer of cake on a serving platter and frost the top.
  14. Place the second cake layer on top and frost the top and sides.
  15. Decorate with additional Lucky Charms on top.
  16. Slice and serve your Lucky Charm Cake.
