Ingredients
  

  • 4 boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 cup mushrooms sliced
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season chicken thighs with salt and pepper, then add them to the skillet.
  3. Flip the chicken thighs and cook for an additional 5-7 minutes until cooked through.
  4. In the same skillet, add sliced mushrooms and cook until browned.
  5. Add minced garlic to the mushrooms and sauté for another minute.
  6. Pour in the heavy cream and add Dijon mustard, stirring to combine.
  7. Return the chicken thighs to the skillet, spooning sauce over them.
  8. Garnish with fresh parsley before serving.
