Method
- Soak the beans overnight or for at least 8 hours.
- In a large pot, heat vegetable oil over medium heat and sauté the onion, bell pepper, celery, and garlic until softened.
- Add soaked beans, water, thyme, bay leaf, smoked paprika, and cayenne pepper to the pot. Bring to a boil.
- Reduce heat to low and cover the pot. Simmer the beans for 1.5 to 2 hours or until tender.
- Remove the bay leaf and season with salt and pepper to taste.
- Serve the beans over cooked white rice.
