Classic Feijoada: A Hearty Brazilian Stew

Feijoada made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 500 g black beans
  • 300 g pork shoulder
  • 200 g smoked sausage
  • 150 g chorizo
  • 150 g beef brisket
  • 1 onion
  • 4 cloves garlic
  • 2 bay leaves
  • Salt and pepper
  • 2 tbsp olive oil

Method
 

  1. Soak the black beans overnight
  2. Heat olive oil in a large pot over medium heat
  3. Add chopped onions and garlic to the pot
  4. Brown the pork shoulder and beef brisket
  5. Stir in the sausage and chorizo
  6. Add soaked black beans, bay leaves, and enough water to cover
  7. Season with salt and pepper, then bring to a boil
  8. Lower the heat and simmer for 2-3 hours
  9. Taste and adjust seasoning before serving
  10. Serve with rice and sliced oranges
