Add the egg, baking soda, vanilla extract, and salt to the bowl, mixing just until incorporated.
Use a cookie scoop to portion out the dough and roll each portion into a ball.
Place the dough balls on a baking sheet lined with parchment paper, spaced about 2 inches apart.
Bake for approximately 10 to 12 minutes, until the edges are lightly golden.
Remove the cookies from the oven and immediately press a chocolate kiss into the center of each cookie.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
