Ingredients
  

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 large egg
  • 2 teaspoons baking soda
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 24 chocolate kisses

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine peanut butter, granulated sugar, and brown sugar until smooth.
  3. Add the egg, baking soda, vanilla extract, and salt to the bowl, mixing just until incorporated.
  4. Use a cookie scoop to portion out the dough and roll each portion into a ball.
  5. Place the dough balls on a baking sheet lined with parchment paper, spaced about 2 inches apart.
  6. Bake for approximately 10 to 12 minutes, until the edges are lightly golden.
  7. Remove the cookies from the oven and immediately press a chocolate kiss into the center of each cookie.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
