Ingredients

  • 4 cups mashed sweet potatoes
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup mini marshmallows
  • 1/2 cup pecans chopped (optional)

Method

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the sweet potatoes by peeling and boiling them until soft. Drain and mash until smooth.
  3. In a large mixing bowl, combine the mashed sweet potatoes, sugar, milk, melted butter, eggs, vanilla, cinnamon, and nutmeg.
  4. Pour the sweet potato mixture into a greased baking dish and smooth the top with a spatula.
  5. Bake in the preheated oven for 25 minutes or until slightly set.
  6. While the casserole is baking, prepare the topping by mixing melted butter with marshmallows and chopped pecans in a separate bowl.
  7. After 25 minutes, remove the casserole from the oven and spread the marshmallow-pecan mixture evenly over the top.
  8. Return the casserole to the oven and bake for an additional 10-15 minutes, or until the marshmallows are golden and toasty.
  9. Remove from the oven and let it cool for a few minutes before serving.
