Colcannon: A Heartwarming Irish Comfort Dish

Colcannon made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 pounds starchy potatoes
  • 4 cups chopped kale or cabbage
  • 4 tablespoons unsalted butter
  • 1 cup whole milk or cream
  • 4 green onions chopped
  • Salt and pepper to taste

Method
 

  1. Peel and quarter the potatoes.
  2. Boil the potatoes until tender.
  3. Drain and return the potatoes to the pot.
  4. Mash the potatoes until smooth.
  5. In a separate pan, sauté the greens and green onions in butter.
  6. Combine the mashed potatoes and sautéed greens mixture.
  7. Stir in milk or cream, and season with salt and pepper.
  8. Serve warm with a dollop of butter on top.
