Method
- Peel and quarter the potatoes.
- Boil the potatoes until tender.
- Drain and return the potatoes to the pot.
- Mash the potatoes until smooth.
- In a separate pan, sauté the greens and green onions in butter.
- Combine the mashed potatoes and sautéed greens mixture.
- Stir in milk or cream, and season with salt and pepper.
- Serve warm with a dollop of butter on top.
