Ingredients
  

  • 12 oz pasta penne or fusilli
  • 1 lb boneless chicken breast
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup frozen peas
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Method
 

  1. Cook the pasta according to package instructions and drain.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the diced chicken and cook until browned and fully cooked, about 6-8 minutes.
  4. Stir in the carrots and celery, cooking for an additional 3-4 minutes until softened.
  5. Add the cream of chicken soup and chicken broth, stirring until combined.
  6. Add the cooked pasta and frozen peas, stirring to combine thoroughly.
  7. Season with thyme, salt, and pepper, adjusting to taste.
