Ingredients
  

  • 2 medium butternut squash about 3 pounds
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 4 cups vegetable or chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 cup coconut milk or cream optional

Method
 

  1. Prepare the squash
