Comforting Casseroles to Embrace Autumn Flavors

Ingredients
  

  • 2 cups butternut squash cubed
  • 1 cup cooked quinoa
  • 1 cup black beans drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 cup vegetable broth
  • 1/4 cup fresh cilantro chopped
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the butternut squash, cooked quinoa, black beans, and half the cheese.
  3. Add the smoked paprika, cumin, vegetable broth, salt, and pepper to the mixture.
  4. Transfer the mixture to a greased 9x13-inch baking dish.
  5. Top with the remaining cheese and chopped cilantro.
  6. Bake for 30-35 minutes until heated through and the cheese is bubbly.
  7. Remove from the oven and let cool for 5 minutes before serving.
