Comforting Smothered Chicken with Savory Gravy

Ingredients
  

  • 4 chicken thighs bone-in
  • 1 cup all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 tablespoons vegetable oil

Method
 

  1. Season the chicken thighs with salt, black pepper, and paprika.
  2. Dredge the seasoned chicken in flour, shaking off excess.
  3. In a large skillet, heat the oil over medium-high heat. Add the chicken thighs, skin-side down, and sear until golden brown, about 6-7 minutes.
  4. Flip the chicken and cook for an additional 5-6 minutes until browned. Remove and set aside.
  5. In the same skillet, add the sliced onions and sauté until translucent, about 5 minutes. Add garlic and cook for another minute.
  6. Whisk in the remaining flour and cook for 1-2 minutes until golden to form a roux.
  7. Slowly whisk in the chicken broth, stirring to avoid lumps. Bring to a simmer.
  8. Add thyme and return the chicken to the skillet, submerging it in the gravy.
  9. Cover and simmer on low heat for 30 minutes, or until the chicken is cooked through and tender.
  10. Adjust the seasoning of the gravy with additional salt and pepper as needed before serving.
