Ingredients
  

  • 12 ounces pasta preferably fusilli or rotini
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell peppers diced
  • 1 avocado diced
  • 1/2 cup fresh parsley chopped
  • 1/4 cup green onions sliced
  • 1/2 cup Green Goddess dressing
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions until al dente.
  2. Drain the pasta and rinse it under cold water to stop the cooking process.
  3. In a large bowl, combine the pasta, cherry tomatoes, cucumber, bell peppers, avocado, parsley, and green onions.
  4. Pour the Green Goddess dressing over the pasta and vegetables.
  5. Toss gently to combine, adding salt and pepper to taste.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving.
