Ingredients
  

  • 4 boneless skinless chicken breasts
  • 8 ounces Brie cheese rind removed
  • 1 cup cranberry sauce
  • 1 tablespoon fresh thyme chopped
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken breasts by carefully slicing a pocket into each.
  3. Mix the Brie cheese, cranberry sauce, and thyme in a bowl.
  4. Stuff each chicken breast with the cheese and cranberry mixture.
  5. In a shallow dish, combine breadcrumbs, salt, pepper, and olive oil.
  6. Coat each stuffed chicken breast with the breadcrumb mixture.
  7. Place the coated chicken breasts on a baking sheet and bake for 25-30 minutes.
