Ingredients
  

  • 10 oz elbow macaroni
  • 1 lb fresh asparagus
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Cook the macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large saucepan over medium heat, melt the butter. Stir in the flour to form a roux, cooking for about 1-2 minutes until lightly golden.
  4. Slowly whisk in the milk, stirring constantly until the mixture is thick and creamy, about 5 minutes.
  5. Stir in the cheddar and Parmesan cheese, mixing until melted and combined. Season with garlic powder, salt, and pepper.
  6. Add the cooked macaroni and asparagus to the cheese sauce, folding gently to combine.
  7. Transfer the mixture to a greased baking dish. If desired, sprinkle breadcrumbs on top.
  8. Bake in the preheated oven for 25-30 minutes, or until bubbly and golden brown on top.
  9. Remove from the oven and let it sit for 5 minutes before serving.
