Ingredients
  

  • 1 pound baby red potatoes
  • 8 slices of thick-cut bacon
  • 2 ripe avocados
  • 1 small lime
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby red potatoes.
  3. Toss the halved potatoes with olive oil, salt, and pepper on a baking sheet.
  4. Bake the potatoes for 25-30 minutes, flipping halfway through.
  5. While the potatoes bake, cook the bacon until crispy, then chop it into small pieces.
  6. Prepare the guacamole by mashing the avocados in a bowl, then mixing in lime juice, onion, cilantro, salt, and pepper.
  7. Once the potatoes are done, let them cool for a few minutes before adding the guacamole and bacon.
  8. Top each potato half with a generous dollop of guacamole and sprinkle crispy bacon on top.
