Creamy Chicken and Gnocchi, A Comforting Delight

Ingredients
  

  • 1 lb boneless skinless chicken thighs
  • 16 oz gnocchi
  • 2 tbsp olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 cups fresh spinach

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the chicken thighs with salt and pepper, then add to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side until browned and cooked through, then remove and set aside.
  4. In the same skillet, add diced onion and cook until translucent, about 5 minutes.
  5. Add minced garlic and dried thyme, stirring for another minute until fragrant.
  6. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
  7. Stir in heavy cream and bring the mixture to a simmer.
  8. Return the chicken to the skillet, adding spinach and gnocchi.
  9. Let everything simmer for about 3-5 minutes, stirring occasionally.
  10. Taste and adjust seasoning with salt and pepper before serving.
