Ingredients
  

  • 12 ounces fettuccine
  • 1 pound boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 4 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions until al dente.
  2. Meanwhile, heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken thighs and season with salt and pepper. Cook until browned and cooked through, about 6-8 minutes per side.
  4. Remove the chicken from the skillet and let it rest before slicing.
  5. In the same skillet, add the minced garlic and sun-dried tomatoes; sauté for about 2 minutes until fragrant.
  6. Pour in the heavy cream and stir in the Italian seasoning, letting the mixture simmer for 3-4 minutes until slightly thickened.
  7. Add in the fresh spinach and cook until wilted, stirring occasionally, about 2 minutes.
  8. Slice the rested chicken and return it to the skillet, stirring to combine all elements.
  9. Drain the cooked pasta and add it directly to the skillet, tossing everything to coat evenly.
  10. Adjust seasoning with additional salt and pepper to taste, then finish with grated Parmesan cheese before serving.
