Crispy Baked Arancini: Healthier Italian made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 cups cooked arborio rice
  • 1/2 cup grated Parmesan cheese
  • 1 cup mozzarella cheese cubed
  • 1 egg beaten
  • 1/2 cup all-purpose flour
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • Cooking spray or olive oil

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine cooked arborio rice, grated Parmesan, and cubed mozzarella.
  3. Add the beaten egg, salt, and pepper; mix everything together until well combined.
  4. Shape the mixture into golf ball-sized spheres.
  5. Dust each ball in flour, then dip in remaining beaten egg, and finally coat with breadcrumbs.
  6. Place the arancini on a baking sheet lined with parchment paper.
  7. Spray the arancini lightly with cooking spray or drizzle with olive oil.
  8. Bake for 25-30 minutes, turning halfway through.
  9. Let them cool slightly before serving.
