Ingredients

  • 1 pound white fish fillets such as cod or haddock
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 2 cups panko bread crumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cooking spray or olive oil for greasing

Method

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and lightly grease with cooking spray or brush with olive oil.
  3. Prepare three shallow bowls: one with flour, the second with beaten eggs, and the third with a mixture of panko bread crumbs, garlic powder, paprika, salt, and pepper.
  4. Cut the fish fillets into strips approximately 1 inch wide.
  5. Dredge each fish strip in flour, shaking off excess, then dip in beaten eggs, followed by coating with the seasoned panko breadcrumbs.
  6. Arrange the coated fish sticks on the prepared baking sheet in a single layer.
  7. Spray the tops of the fish sticks lightly with cooking spray or drizzle with olive oil.
  8. Bake in the preheated oven for 15-20 minutes, turning halfway through until golden brown and cooked through.
  9. Remove from the oven and let cool for a few minutes before serving with your favorite dipping sauces.
