Crockpot Chicken Thighs with Lemon Garlic Sauce

Ingredients
  

  • 4 bone-in chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 lemon juiced and zested
  • 1 cup chicken broth
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon cornstarch optional

Method
 

  1. Prepare the crockpot by greasing it lightly.
  2. Season the chicken thighs with salt and pepper.
  3. In a skillet, heat olive oil over medium-high heat and brown the chicken thighs.
  4. Transfer the browned chicken thighs to the crockpot.
  5. Add minced garlic, lemon juice, lemon zest, chicken broth, and thyme to the crockpot.
  6. Cover and cook on low for 6-8 hours, or high for 4 hours.
  7. Once cooked, remove the thighs and set them aside.
  8. If desired, thicken the sauce with cornstarch.
  9. Serve the chicken thighs with the sauce poured over.
