Ingredients
  

  • 2 large bell peppers diced
  • 1 lb ground beef or turkey
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 cup frozen corn
  • 1 cup cooked rice or quinoa
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Brown the ground meat in a skillet over medium heat, then drain excess fat if necessary.
  2. Add the browned meat, diced bell peppers, onion, and garlic to the crockpot.
  3. Pour in the diced tomatoes and broth, then stir to combine.
  4. Stir in the frozen corn, cooked rice or quinoa, and Italian seasoning.
  5. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, taste and adjust seasoning if needed.
  7. Serve hot, garnished with cheese or fresh herbs if desired.
