- Brown the ground meat in a skillet over medium heat, then drain excess fat if necessary.
- Add the browned meat, diced bell peppers, onion, and garlic to the crockpot.
- Pour in the diced tomatoes and broth, then stir to combine.
- Stir in the frozen corn, cooked rice or quinoa, and Italian seasoning.
- Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, taste and adjust seasoning if needed.
- Serve hot, garnished with cheese or fresh herbs if desired.
