Mocha Brownies with Cafe Latte Frosting made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 tablespoon instant espresso powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons brewed coffee
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Method

  1. Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan with parchment paper.
  2. In a large saucepan, melt the butter over medium heat. Once melted, remove from heat and stir in granulated sugar and brown sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. Sift together the flour, cocoa powder, espresso powder, and salt in a separate bowl.
  5. Gradually fold the dry ingredients into the wet mixture until just combined; do not overmix.
  6. Pour the brownie batter into the prepared pan, smoothing the top with a spatula.
  7. Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. While the brownies cool, prepare the cafe latte frosting by mixing powdered sugar with brewed coffee and milk until smooth.
  9. Add vanilla extract to the frosting and mix until well combined. Spread it generously over the cooled brownies.
  10. Cut into squares and serve. Enjoy your mocha brownies with a coffee or a glass of milk for a perfect pairing!
