Wash and peel the sweet potatoes. Cut them into small cubes.

While the sweet potatoes are roasting, sauté the spinach in a pan.
Once the sweet potatoes are tender, remove them from the oven and let them cool slightly.
In a bowl, combine the sweet potatoes, sautéed spinach, and feta cheese if using.
Cook the eggs to your preference: poached, scrambled, or fried.
