Delicious Breakfast Sweet Potato Creations

Ingredients
  

  • 2 medium sweet potatoes
  • 4 large eggs
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups spinach fresh or frozen
  • 1/4 cup feta cheese optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes. Cut them into small cubes.
  3. Toss the sweet potatoes with olive oil, smoked paprika, salt, and pepper.
  4. Spread the seasoned sweet potatoes on a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes, flipping halfway.
  6. While the sweet potatoes are roasting, sauté the spinach in a pan.
  7. Once the sweet potatoes are tender, remove them from the oven and let them cool slightly.
  8. In a bowl, combine the sweet potatoes, sautéed spinach, and feta cheese if using.
  9. Cook the eggs to your preference: poached, scrambled, or fried.
  10. Serve the mixture topped with your cooked eggs, and enjoy!
