Ingredients
  

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter melted
  • 1 large egg
  • 1 teaspoon almond extract
  • 2 cups fresh or frozen cherries pitted and halved
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch
  • ¼ teaspoon salt
  • Powdered sugar for dusting optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine the flour, sugar, and salt.
  3. Stir in the melted butter and egg, mixing until combined.
  4. Press the mixture into the bottom of a greased 8x8-inch baking pan to form the crust.
  5. Bake the crust for 15 minutes, until lightly golden.
  6. While the crust bakes, prepare the cherry filling.
  7. In a medium bowl, combine the cherries, lemon juice, almond extract, cornstarch, and sugar.
  8. Pour the cherry filling over the pre-baked crust, spreading it evenly.
  9. Bake for an additional 25-30 minutes, until the filling is bubbly and the bars are slightly firm.
  10. Allow the bars to cool completely in the pan before slicing and serving.
