Ingredients
  

  • 2 cups all-purpose flour
  • 1 packet 2¼ teaspoons active dry yeast
  • ¾ cup warm water 110°F
  • 1 tablespoon sugar
  • ½ tablespoon salt
  • ½ cup baking soda for the bath
  • Coarse sea salt for topping

Method
 

  1. Activate the yeast by combining warm water, sugar, and yeast in a bowl.
  2. Mix flour and salt in a large bowl, then combine with the yeast mixture.
  3. Knead the dough for about 5 minutes until smooth and elastic.
  4. Let the dough rise in a warm place for one hour, covered with a damp cloth.
  5. Preheat your oven to 425°F (220°C) and prepare a baking soda bath.
  6. Shape the dough into small pieces, roughly the size of a golf ball.
  7. Dip each piece into the baking soda bath for 30 seconds, then place on a baking sheet.
  8. Sprinkle with coarse sea salt and bake for 12-15 minutes until golden brown.
  9. Allow cooling slightly before serving.
