Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 medium carrots diced
  • 1 bell pepper diced
  • 1 zucchini diced
  • 1 can 14.5 oz diced tomatoes
  • 1 can 15 oz chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic, carrots, and bell pepper.
  4. Add the zucchini and diced tomatoes with their juices.
  5. Stir in the chickpeas, vegetable broth, oregano, and cumin.
  6. Bring the mixture to a boil, then reduce to a simmer.
  7. Simmer for 25-30 minutes, stirring occasionally.
  8. Season with salt and pepper to taste before serving.
  9. Garnish with fresh parsley.
