Ingredients
  

  • 12 oz penne pasta
  • 1 lb Italian sausage casings removed
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 1 bell pepper diced
  • 1 can 14.5 oz diced tomatoes, with juices
  • 2 cups chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup fresh spinach roughly chopped
  • ½ cup grated Parmesan cheese

Method
 

  1. In a large pot, heat a bit of oil over medium heat and add the Italian sausage.
  2. Once browned, add the diced onion and bell pepper to the pot.
  3. Stir in the minced garlic and cook for about 1 minute.
  4. Add the diced tomatoes, chicken broth, Italian seasoning, salt, and pepper, stirring to combine.
  5. Bring the mixture to a simmer before adding the penne pasta.
  6. Cover and let it cook for 10-12 minutes, stirring occasionally, until the pasta is al dente.
  7. Once the pasta is cooked, stir in the chopped spinach and let it wilt for 2-3 minutes.
  8. Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
  9. Adjust seasoning as needed, serve hot, and enjoy!
