Ingredients
  

  • 8 ounces pasta penne or fusilli
  • 1 pound Italian sausage sweet or spicy
  • 1 medium eggplant diced
  • 1 can 14.5 ounces diced tomatoes, with juices
  • 1 cup chicken or vegetable broth
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

  1. Heat a large pot over medium heat and add the Italian sausage.
  2. Once browned, add the diced eggplant and cook until softened.
  3. Add minced garlic, oregano, and red pepper flakes, stirring until fragrant.
  4. Pour in the diced tomatoes with their juices and chicken broth.
  5. Add the pasta, salt, and pepper, and bring the mixture to a boil.
  6. Reduce heat and simmer until the pasta is tender, about 10-12 minutes.
  7. Taste and adjust seasoning as necessary, then remove from heat.
  8. Serve hot, garnished with fresh basil.
