Method
- Place chicken breasts in the slow cooker.
- Add black beans and corn to the slow cooker.
- Pour salsa over the chicken and beans.
- Sprinkle chili powder, cumin, garlic powder, and onion powder over the top.
- Add salt and pepper according to taste.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once done, shred the chicken directly in the slow cooker.
- Serve over cooked rice or quinoa.
- Garnish with fresh cilantro and serve with avocado and lime wedges.
