Delicious Slow Cooker Chicken Burrito Bowl Recipe

SLOW COOKER CHICKEN BURRITO BOWL made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1.5 lbs boneless chicken breasts
  • 1 can 15 oz black beans, drained and rinsed
  • 1.5 cups corn frozen or canned
  • 1 cup salsa your choice of heat
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • Fresh cilantro chopped, for garnish
  • Avocado and lime wedges for serving

Method
 

  1. Place chicken breasts in the slow cooker.
  2. Add black beans and corn to the slow cooker.
  3. Pour salsa over the chicken and beans.
  4. Sprinkle chili powder, cumin, garlic powder, and onion powder over the top.
  5. Add salt and pepper according to taste.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Once done, shred the chicken directly in the slow cooker.
  8. Serve over cooked rice or quinoa.
  9. Garnish with fresh cilantro and serve with avocado and lime wedges.
