Prepare the teriyaki marinade by whisking together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.
Preheat the air fryer to 400°F (200°C).
Remove the salmon from the marinade and place it in the air fryer basket. Reserve the marinade for later use.
Cook the salmon in the air fryer for about 8-10 minutes, or until it flakes easily with a fork.
While the salmon is cooking, prepare the salad by tossing mixed greens, cherry tomatoes, and cucumber in a salad bowl.
Once the salmon is cooked, warm the reserved marinade in a saucepan over medium heat until it thickens slightly.
Serve the salmon atop the salad, drizzling the thickened marinade over both.
Sprinkle with sesame seeds before serving.
