Delicious Teriyaki Salmon and Refreshing Salad

Ingredients
  

  • 4 salmon fillets 6 oz each
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 garlic cloves minced
  • 1 tablespoon fresh ginger minced
  • Mixed salad greens 4 cups
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1 tablespoon sesame seeds for garnish

Method
 

  1. Prepare the teriyaki marinade by whisking together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.
  3. Preheat the air fryer to 400°F (200°C).
  4. Remove the salmon from the marinade and place it in the air fryer basket. Reserve the marinade for later use.
  5. Cook the salmon in the air fryer for about 8-10 minutes, or until it flakes easily with a fork.
  6. While the salmon is cooking, prepare the salad by tossing mixed greens, cherry tomatoes, and cucumber in a salad bowl.
  7. Once the salmon is cooked, warm the reserved marinade in a saucepan over medium heat until it thickens slightly.
  8. Serve the salmon atop the salad, drizzling the thickened marinade over both.
  9. Sprinkle with sesame seeds before serving.
