Preheat your oven to 375°F (190°C).
In a skillet, sauté the onions and celery until softened.
In a large bowl, combine the cubed bread, cooked turkey, sautéed onions, celery, parsley, sage, poultry seasoning, salt, and pepper.
In a separate bowl, whisk together the beaten egg and chicken broth.
Pour the broth mixture over the stuffing mixture and combine gently.
Form the mixture into balls about 1.5 inches in diameter.
Place the formed balls on a baking sheet lined with parchment paper.
Bake for 25-30 minutes or until golden brown.
Let the turkey stuffing balls cool slightly before serving.
