Deliciously Cheesy Pizza Pockets for Any Occasion

Cheesy Pizza Pockets made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 1 tablespoon olive oil
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup pizza sauce or marinara
  • 1/2 cup preferred toppings pepperoni, veggies, etc.

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the flour, baking powder, and salt.
  3. Add water and olive oil to the dry mixture and stir until a dough forms.
  4. Knead the dough on a floured surface for about 5 minutes until smooth.
  5. Roll out the dough into a large rectangle about 1/4 inch thick.
  6. Cut the dough into smaller squares, approximately 4x4 inches.
  7. Place a tablespoon of sauce, followed by a handful of cheese and toppings on one half of each square.
  8. Fold the dough over to form a pocket and crimp the edges to seal.
  9. Arrange the pockets on a baking sheet lined with parchment paper.
  10. Bake for 15-20 minutes or until golden brown and crispy.
  11. Let cool slightly before serving – this will make the filling safer to eat.
