Deliciously Creamy Broccoli Stuffed Chicken Breast

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup fresh broccoli finely chopped
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the broccoli filling by mixing chopped broccoli, cream cheese, cheddar cheese, garlic powder, onion powder, salt, and pepper in a bowl.
  3. Carefully create pockets in each chicken breast by slicing them horizontally, ensuring not to cut all the way through.
  4. Stuff each chicken breast with the broccoli cream cheese mixture, using toothpicks to seal them if necessary.
  5. Season the outside of the chicken breasts with salt and pepper, and heat olive oil in a pan over medium-high heat.
  6. Sear the stuffed chicken breasts in the hot pan for 3-4 minutes on each side until golden brown.
  7. Transfer the seared chicken to a baking dish and bake in the preheated oven for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  8. Remove from the oven and let the chicken rest for 5 minutes before serving.
