Ingredients
  

  • 2 ripe avocados
  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray or olive oil

Method
 

  1. Preheat the oven to 425°F (220°C).
  2. Slice the avocados in half and remove the pits.
  3. Cut each avocado half into wedges.
  4. Set up your breading station with three shallow bowls: one for flour, one for beaten eggs, and one for breadcrumbs mixed with garlic powder, paprika, salt, and pepper.
  5. Dip each avocado wedge into the flour, shaking off any excess.
  6. Next, dip the floured wedge into the beaten eggs, ensuring it's fully coated.
  7. Finally, roll the wedge in the seasoned breadcrumbs until evenly coated.
  8. Place the coated avocado fries on a baking sheet lined with parchment paper, making sure they are spaced apart.
  9. Lightly spray or brush the fries with cooking oil before baking.
  10. Bake for 15-20 minutes or until golden brown and crispy.
  11. Remove from the oven, let cool slightly, and serve with your favorite dipping sauce.
