Deliciously Crunchy Caramel Popcorn Clusters

Caramel Popcorn Clusters made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 cup popcorn kernels
  • 2 cups granulated sugar
  • 1/2 cup unsalted butter
  • 1/4 cup light corn syrup
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts optional

Method
 

  1. Pop the popcorn kernels using your preferred method. Set aside in a large bowl.
  2. In a saucepan, combine sugar, butter, corn syrup, and salt over medium heat.
  3. Once boiling, stop stirring and allow it to cook for 4-5 minutes until it reaches a light golden color.
  4. Remove from heat and stir in vanilla extract.
  5. Pour the caramel over the popped popcorn and mix gently to coat evenly.
  6. If using nuts, fold them into the popcorn at this stage.
  7. Allow the mixture to cool slightly before forming clusters.
  8. Place formed clusters onto parchment paper to set completely.
