Activate the yeast by combining warm water, yeast, and sugar in a bowl. Let it sit for about 5-10 minutes until frothy.
In a mixing bowl, combine flour and salt. Gradually add in the yeast mixture and olive oil, stirring until a sticky dough forms.
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-1.5 hours or until doubled in size.
Preheat your oven to 475°F (245°C).
Roll out the dough to your desired thickness, about 1/4 inch thick, and cut out shapes resembling stockings.
Transfer the cut dough shapes to a baking sheet lined with parchment paper. Spread a layer of pizza sauce on each stocking.
Layer your chosen toppings generously on each stocking, then sprinkle with mozzarella cheese on top.
Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the cheese is bubbling.
Remove from the oven and let cool for a few minutes before serving. Garnish with fresh herbs if desired.
