Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup fresh or frozen cranberries chopped
  • 1 cup walnuts or pecans chopped
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg beaten
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9x5-inch loaf pan by greasing it or lining it with parchment paper.
  3. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, mix the wet ingredients: oil, egg, vanilla, and chopped cranberries.
  5. Pour the wet mixture into the dry ingredients, stirring gently until just combined. Do not overmix.
  6. Fold in the chopped nuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Once baked, remove from the oven and let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and enjoy!
