Deliciously Simple Cranberry Custard Pie Recipe

Ingredients
  

  • 1 ½ cups fresh cranberries
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 unbaked pie crust 9-inch

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the pie crust according to your preference and place it in a 9-inch pie pan.
  3. In a mixing bowl, combine the cranberries and ½ cup of sugar. Toss to coat the cranberries evenly.
  4. In a separate bowl, whisk together the remaining sugar, eggs, heavy cream, vanilla extract, and lemon juice until smooth and well combined.
  5. Gently fold in the sugared cranberries into the custard mixture until evenly distributed.
  6. Pour the custard mixture over the prepared pie crust, spreading it evenly.
  7. Bake in the preheated oven for 45 to 55 minutes, or until the custard is set in the center and the top is lightly golden.
  8. Remove from the oven and allow the pie to cool completely on a wire rack.
  9. Once cooled, refrigerate the pie for at least two hours before serving.
