- Heat olive oil in a pan over medium-high heat.
- Add the shrimp and season with salt and pepper.
- Remove shrimp from the pan and set aside.
- In the same pan, add garlic and cherry tomatoes and sauté for 3-5 minutes.
- Stir in the spinach and cook until wilted.
- Pour in the heavy cream and stir to combine.
- Add Parmesan cheese and Italian seasoning, mixing well.
- Return the shrimp to the pan and heat through for 2-3 minutes.
- Adjust seasoning with salt and pepper to taste and serve.
