Deliciously Simple Tuscan Shrimp for Home Cooks

Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes halved
  • 3 cloves garlic minced
  • 2 cups fresh spinach roughly chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a pan over medium-high heat.
  2. Add the shrimp and season with salt and pepper.
  3. Remove shrimp from the pan and set aside.
  4. In the same pan, add garlic and cherry tomatoes and sauté for 3-5 minutes.
  5. Stir in the spinach and cook until wilted.
  6. Pour in the heavy cream and stir to combine.
  7. Add Parmesan cheese and Italian seasoning, mixing well.
  8. Return the shrimp to the pan and heat through for 2-3 minutes.
  9. Adjust seasoning with salt and pepper to taste and serve.
