Stuff each jalapeno half with the cheese mixture, packing it in well.
Dip the stuffed jalapenos in breadcrumbs, coating them evenly.
Place the coated jalapenos on a baking sheet lined with parchment paper and lightly spray with cooking spray.
Bake for 20-25 minutes, or until the poppers are golden brown.
Remove from the oven and let cool for a few minutes before serving.
