Deliciously Versatile Spinach Frittata Recipe

Ingredients
  

  • 6 large eggs
  • 2 cups fresh spinach chopped
  • 1 cup ricotta cheese
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1/2 cup grated parmesan cheese
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon olive oil

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and chopped spinach to the skillet. Sauté until the spinach wilts, about 2-3 minutes.
  4. In a bowl, whisk together eggs, ricotta, parmesan, salt, and pepper.
  5. Pour the egg mixture into the skillet over the sautéed vegetables.
  6. Cook on the stovetop for about 2 minutes until the edges start to set.
  7. Transfer the skillet to the preheated oven. Bake for 18-20 minutes, or until the center is set and the top is lightly golden.
  8. Remove from the oven and let it cool for a few minutes before slicing.
  9. Serve warm or at room temperature, garnished with additional cheese or herbs if desired.
