Preheat your oven to 400°F (200°C).
Wash and pierce each sweet potato with a fork.
Place the sweet potatoes on a baking sheet and roast for 45-60 minutes.
While the sweet potatoes are baking, prepare the apple filling.
In a mixing bowl, combine the diced apples, pecans, cinnamon, nutmeg, maple syrup, and salt.
After the sweet potatoes are cooked, let them cool slightly before cutting them open.
Scoop out a portion of the sweet potato flesh to make room for the filling.
Mix the scooped sweet potato flesh with the apple mixture, then stuff it back into the skins.
Return the stuffed sweet potatoes to the oven and bake for an additional 15 minutes.
Serve warm, garnished with additional pecans or a drizzle of maple syrup if desired.
