In a bowl, whisk together the flour, baking soda, and salt.
In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredient mixture to the wet mixture, blending until just combined.
Stir in the chopped ham and food coloring until well combined. If using, add the chocolate chips.
Scoop tablespoon-sized portions of dough onto a lined baking sheet, spacing them apart.
Bake for 10-12 minutes, or until the edges are set and lightly browned.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
